The Story

The word "Chapli" comes from chaprikh which is Pashto for "flat." (Chapli Kebabs: A Khyber Pakhtunkhwa Specialty — Google Arts & Culture) That's exactly what this kabab is: a thin, pan-fried patty that crackles like a secret being told.

 

Its birthplace? Taru Jabba, a small town near Peshawar where roadside vendors first started shaping minced meat into crispy discs. The recipe was then spread to Mardan, Takht Bhai and later the market streets of Peshawar city. 

 

A number of names are definite in this story and one of them is Jalil Kabab House. This place was located in the Qissa Khwani Bazaar and it did not only sell kababs, it created a history. The old trade routes that went through this Bazaar also account for the kababs to be so famous. The locals claim that Jalil has made street food into folklore one kabab at a time. Today, Taru Jabba kabab stalls still draw crowds. Mardan Chapli Kabab is equally famous. But Peshawar? It owns the title.

 

What Goes Into a Perfect Chapli Kabab

 

Let's talk about ingredients because this isn't your average kabab.

 

You start with minced beef. Chicken and mutton are not used as beef is the soul here. Then come the spices which include crushed coriander seeds, green chilies, tomatoes, and pomegranate seeds for that tangy kick. But the real magic lies in charbi which is animal fat. It melts into the meat as it cooks, giving the kabab that juicy, crispy edge.

 

The meat is shaped by hand, pressed flat, and slapped onto a smoking tawa. The high heat flames from the tawa crisp the edges and the fat bubbles resulting in an aroma that is truly unforgettable. 

 

These days, you'll also find chicken chapli kabab which is a lighter version for the calorie-conscious. And in trendy cafes across Lahore and Karachi, the Chapli Kabab burger has become a thing. It is modern but nothing beats the original.

Chapli Kabab isn't a diet food at all.

 

One kabab packs around 390 to 450 calories (Chapli Kebab Nutrition), depending on size and fat content. But here's the thing: no one eats it to count calories. Do also keep in mind that shami kabab is different from chapli kabab. Chapli kabab is much thinner and contains meat and spices as compared to shami kabab which has both meat and lentils. 

 

In Pashtun culture, food is love. It's called melmastia (مہمان نوازی)  which is the sacred duty of hospitality and someone who doesn’t comply will lose face in the community forever (Central Asia Rally, 2015).
